KALAMATA PDO: Guarantees quality, authenticity and traceability to the city of KALAMATA, Greece. 100% monovarietal , not fully ripened, KORONEIKI olive, milled within 24 hours of harvest.
BOTTLING: Within year of harvest, numbered containers with traceability to farmer and mill and free acidity level ≤0.2%.
HIGH POLYPHENOL CONTENT: Associated with its slightly bitter and pungent taste.
